RECIPE OF THE MONTH - Mock Caesar Salad

This recipe substitutes the nutritional yeast for the egg and the soy sauce for the anchovies, keeping vegetarians happy and eliminating the potential for salmonella from raw eggs.

1 medium head romaine lettuce, torn into rough pieces
2 T extra-virgin olive oil
3 T lemon juice
2 T soy sauce (replaces anchovy paste)
2 T nutritional (or brewer's) yeast (replaces egg)
8 walnut halves or 8 whole almonds (replaces cheese)
2 T water
2 cloves garlic

1 C croutons (optional)
Cracked black pepper to taste

Clean lettuce and tear into pieces. Place oil, lemon juice, soy sauce, yeast, nuts, water, and garlic in a food processor or blender and blend until smooth. Toss with romaine and add croutons and black pepper just before serving.
